Healthy Chicken Salad

 

Recipe:

  • Coarse salt and ground pepper
  • 1 chicken breast
  • 1 celery stalks, finely chopped
  • 1/4 small red onion, finely chopped
  • Lettuce & cucumber
  • 1/4 cup chopped fresh parsley

For marinade:

  • Dijon mustard
  • Lemon juice
  • Mayonaise
  • Salt and pepper

Method: 

  1. Smother chicken in marinade and grill for 10 minutes each side. 
  2. Prepare the salad in the meantime.
