Healthy Chicken Salad
Recipe:
- Coarse salt and ground pepper
- 1 chicken breast
- 1 celery stalks, finely chopped
- 1/4 small red onion, finely chopped
- Lettuce & cucumber
- 1/4 cup chopped fresh parsley
For marinade:
- Dijon mustard
- Lemon juice
- Mayonaise
- Salt and pepper
Method:
- Smother chicken in marinade and grill for 10 minutes each side.
- Prepare the salad in the meantime.
